Creamy Butternut Squash Soup

This warm and comforting butternut squash soup is perfect for chilly days or when you need a little cozy nourishment. It’s rich, creamy (without dairy), and packed with wholesome ingredients.

Ingredients (Serves 4–6)

  • 1 medium butternut squash, peeled and cubed (about 4 cups)

  • 1 tablespoon olive oil

  • 1 medium onion, chopped

  • 2 garlic cloves, minced

  • 1 medium carrot, chopped

  • 1 medium apple, peeled and chopped (for natural sweetness)

  • 4 cups vegetable broth

  • 1/2 teaspoon ground cinnamon

  • 1/4 teaspoon nutmeg

  • Salt and pepper to taste

  • 1/4 cup coconut milk or cream (optional, for extra creaminess)

Optional Toppings:

  • Pumpkin seeds

  • A drizzle of coconut milk

  • Crusty bread for serving

Instructions

  1. Sauté the Aromatics: Heat the olive oil in a large pot over medium heat. Add the chopped onion and carrot, and sauté until softened, about 5 minutes. Stir in the garlic and cook for 1 minute until fragrant.

  2. Add the Squash and Apple: Stir in the butternut squash and apple, cooking for another 2–3 minutes to allow the flavors to meld.

  3. Simmer the Soup: Pour in the vegetable broth, and add the cinnamon, nutmeg, salt, and pepper. Bring the mixture to a boil, then reduce the heat and simmer for 20–25 minutes, or until the squash is tender.

  4. Blend Until Smooth: Use an immersion blender to puree the soup until smooth and creamy. Alternatively, carefully transfer the soup to a blender in batches.

  5. Add Creaminess (Optional):Stir in the coconut milk or cream for added richness, if desired. Adjust the seasoning with more salt and pepper to taste.

  6. Serve and Enjoy: Ladle the soup into bowls, top with pumpkin seeds or a drizzle of coconut milk, and serve with crusty bread for dipping.
